1997 Chevy 6.5L What is the difference between oiled and dry air filter? Do either one work? What are the benefits of one vs the other? Trying to keep EGT cool when towing.. let it breath more is a good place to start I figure. Thanks!

Oiled filters are usually made from cotton or synthetic material that's coated with oil to help trap dirt and debris. Oiled filters capture finer particles, giving you better engine protection and offer better filtration, but if they get too dirty it may cause higher restriction which could slightly increase EGTs.
Dry filters are typically made from paper or foam and don't require oil. With dry filters you'll have lower maintenance and they tend to have lower airflow resistance compared to oil filters so they can provide better fuel economy and efficiency. Both options will improve airflow.
For towing, it can depend on the conditions; an oiled filter will be better for long-protection especially in dirty environments. If you do a lot of heavy towing in dusty areas, an oiled filter would be a great choice.
Dry filters are better for easy maintenance and slightly better airflow. If you're looking for minimal hassle and don't tow in dusty conditions, a dry filter would be a good choice.
