  Do they fit a RZR pro r

  For the RZR pro r, it fits the upper ball joint only.

  Do the grease nipple just stick off like in the pic?

  Yes, the grease fittings are designed to protrude as shown. Position the grease fittings facing inwards or toward a shielded area to minimize exposure to debris and obstacel encountered during off-road use.
